COOKING WITH TKO: MINI PANCAKES

For Mother's Day, Bryan and I decided to host a brunch at our place for our mommas. We are both very lucky to live super close to our families (only 3 miles away from each!) and that our parents are super good friends, so a fun Mother's Day brunch definitely had to happen.

We made two frittatas, hash browns, fruit salad, had a bunch of District Doughnuts (omg so good), a Bloody Mary bar, mimosas and these cute little mini pancakes!! I found the idea on Pinterest (duh) a year or two ago and was so excited to finally make them. I mean who doesn't love pancakes?!? Especially mini ones that don't fill you up so you can keep eating! WIN!

We used pre-made pancake mix from Trader Joe's (so good) to make these and each pancake was about a teaspoon. Once you have made a bunch, stack them as high as you want, top off with some yummy berries, powered sugar, maple syrup and a bamboo stick! They are so good.
